Ingredients:
150g butter, cubed, plus extra for greasing
150g muscovado sugar
150g golden syrup
1 tsp vanilla extract
225g rolled oats
Method:
Prepare the Tin: Grease an 18cm (7in) square baking tin with butter and line the base with baking paper.
Melt Ingredients: In a saucepan, gently melt the butter, sugar, and golden syrup over low heat until the butter has melted and the sugar dissolved. Remove from heat and stir in the vanilla extract.
Combine with Oats: Add the rolled oats to the melted mixture, stirring until well combined.
Bake: Spoon the mixture into the prepared tin, leveling the top. Bake in a preheated oven at 180°C/160°C fan/Gas 4 for about 30 minutes, or until firm around the edges but still slightly soft in the center.
Cool and Slice: Allow to cool in the tin for about 20 minutes, then turn out, remove the baking paper, and cut into 24 pieces.
Additional Tips:
For a firmer texture, consider adding more oats as Sue W suggests.
Ensure not to overbake; the flapjacks should be slightly soft in the center for the ideal chewy consistency.
